RECIPE


Pan Fried Lotus Root with two Treasures
Preparation Time: 10 minutes
Cooking Time: 10 minutes
Portion Size: 2 pax

INGREDIENTS
Lotus roots, sliced 8 slices
Mushrooms, diced 2 pieces
Scallop, minced 120g
Shrimps, whole 30g
Chye Sim, sliced 60g

Corn starch Appropriate amount
Cooking oil ½ tsp
Chinese parsley to garnish
Spring onions to garnish

Seasoning A
Salt 1/3 tsp
Sugar 1/3 tsp
Chicken Essence powder ½ tsp
Corn starch ½ tsp
                                                                                                     
Seasoning B (sauce)
Chicken broth ½ cup
Oyster sauce 1 tbsp
Sugar 1/3 tsp
Chicken essence powder ½ tsp
Corn starch ½ tsp

PREPARATION & METHOD
1.      Mince scallop and add mushroom bits with Seasoning (A). Mix ingredients together to make stuffing.
2.      Add a little corn starch to each lotus slice then fill it iwht stuffing an place a few shrimps on it.
3.      Pre-heat Tuperchef Inspire Fryer over high heat for 1 minute.
4.      Add cooking oil to Fryer and pan-fry lotus root patties. Place Chye Sim around patties to cook with the lotus root.
5.      Cover Fryer with glass lid and close valve. Reduce heat and cook for 7 minutes.
6.      Remove stuffed lotus and pour Seasoning (B), the sauce into Fryer. Thicken sauce with corn starch.
7.      Garnish dish with Chinese parsley and spring onion.

Notes about cooking in normal pots that reduces nutritional value of food cooked with them:
1.      The addition of water while cooking a dish reduces about 50% of nutritional value in the dish.
2.      Vegetables have a built-in natural supply of vital vitamins, minerals and digestive enzymes. These nutrients are reduced when these vegetables are peeled and boiled.
3.      When vegetables are boiled in an uncovered pot, oxidation occurs, which also causes a good amount of healthy nutrients to be lost through evaporation.

Elements of food prepared in a healthy way:
1.      Choose a pan with at least 2/3 full of food to be cooked.
2.      Use very little or no oil.
3.      Keep cover on pot and close the valve while cooking to preserve nutrients.
4.      Cook on low heat.
